WASHINGTON, D.C., USA — If you're looking for a recipe for brunch or to have on the go during the week, these egg muffins are the perfect option. They cook in no time and are easily customized. Ingredients

4 Nellie's Free Range Eggs, lightly beaten

1/2 cup cottage cheese

1/2 cup shredded cheddar cheese

1/2 cup cooked bacon, crumbled

1/4 cup flour

1/2 tsp dried thyme

Directions

Preheat oven to 350F and grease a mini muffin tin with cooking spray.

Stir all ingredients in a bowl. Spoon into muffin cups, filling to the brim.

Bake for 16-18 minutes, or until firm to the touch and golden brown around the edges. Can be served warm or at room temperature.
