Chef Bailey’s summer grilling recipes

Kick your grilling game up a notch with these delicious summer dishes.

Whether you’re throwing a huge party, having some friends over for a cookout, or just making dinner for the family, your grill is in constant use over the summer. That’s why Chef Bailey is here to spice things up a bit with his fun and tasty recipes for some great summer grilling.

Jalapeño & Cream Cheese

Ingredients:

1 ¼ pound ground meat

Salt and pepper, for seasoning

2 cups chopped jalapeño pepper, seeded

2 (8 ounce) cream cheese packages

Instructions:

In a medium bowl, mix jalapeños and cream cheese. Evenly distribute the cream cheese and pepper mixture in the middle of half of the patties.

Curry Chicken Burgers

Ingredients:

1 ¼ pound ground chicken

Salt and pepper, for seasoning

2 tablespoons curry powder

½ cup scallions (white and green parts), sliced

¾ cup red bell pepper, chopped

1 tbsp cilantro, chopped

2 tbsp ginger, minced

3 tbsp mango chutney

1 ½ tbsp. chipotle sauce

Instructions:

Evenly mix the curry, scallions, cilantro, red bell peppers, and minced ginger into the ground chicken. Form the patties and evenly distribute the mango chutney and chipotle sauce on the indented patties. Top each with another patty and press the edges together to form a seal. Cook on a hot grill for 6 minutes on each side.

BBQ Blue Cheese Turkey Burgers

Ingredients:

1 ¼ pound ground turkey

Salt and pepper, for seasoning

4 tbsp barbecue sauce

3 oz blue cheese, crumbled

Instructions:

Evenly distribute the barbecue sauce in the middle of half of the patties. Top with the cheese. Then top each with another patty and press the edges together to form a seal. Cook on a hot grill for 3 to 5 minutes per side depending on desired doneness.

Grilled Chipotle Veggie Skewers

Ingredients:

2 eggplants, sliced

2 cups sliced mushrooms

2 large red onions, peeled and sliced

3 zucchinis, sliced

1 bottle Tabasco Chipotle Pepper Sauce

½ cup olive oil

Salt and pepper, for seasoning

Instructions:

In a large bowl, rub vegetables with olive oil and season with salt and pepper. Transfer to grill and brush with chipotle sauce repeatedly until cooked. Serve warm.

Grilled Ham Salad with Peaches and Cheese

Ingredients:

½ cup pecans, chopped

1/3 cup extra virgin olive oil

1-2 ham steaks

2 tbsp balsamic vinegar

1tbsp honey

2tsp Dijon mustard

2 tbsp chives

1 red onion, minced

3 peaches, cut into wedges

1 package spring mix salad

4 oz blue or goat cheese

Salt and freshly ground pepper

Instructions:

Preheat a grill to medium. Lightly brush the grill grates with olive oil. Add the ham steaks (or bacon) and grill until marked and heated through, 2 to 3 minutes per side. Remove to a cutting board and slice into ½ inch thick strips; set aside. Whisk the vinegar, honey, mustard, chives and onion in a large bowl. Slowly whisk in the olive oil until emulsified. Add the peaches, spring mix, pecans and ham and gently toss. Season with salt and pepper and top with the cheese.
