June 7th is National Applesauce Cake Day and Chef Ed Whitfield from Prince Georges Community College Culinary Arts Program shares his healthy vegan cake recipe.
Vegan Applesauce Cake
Ingredients
• 2 ½ cups All-purpose Flour
• 2 cups Sugar
• 1 ½ tsp. Baking Soda
• ¼ tsp. Baking Powder
• 1 ½ tsp. Salt
• ½ tsp. Cinnamon
• ½ tsp. Nutmeg
• 1 tsp. Ginger
• ½ tsp. Clove
• 1 tsp. Vanilla Extract
• ½ cup Melted Vegan Butter or Vegetable Oil
• ½ cup Water
• 1 ½ cups Unsweetened Applesauce
• 2 Flax Eggs (To make a flax egg, mix one tablespoon ground flaxseed meal with three tablespoons of water.) Mix together, and let sit for 5-10 minutes, the mixture will begin to thicken and get goopy (like an egg). For this recipe double the mixture.
Directions
• Preheat oven to 375 degrees.
• Grease a 9x13 baking dish
• Combine all ingredients in a large bowl, and mix thoroughly.
• Place baking dish in the oven, after 15 minutes, reduce oven to 350 degrees.
• Bake for an additional 45 minutes or until done.
