Grilled Jerk Chick On a Stick from former White House Chef Charlie Redden

Ingredients:

  • 1 pound of chicken tender breast strips
  • 3 tablespoons of mild jerk seasoning (the chef is using- Walkerswood Traditional Jamaican Jerk seasoning)
  • 3 packs of Sazon Goya seasoning
  • 1/2 cup of olive oil
  • 3 cups of water

Preparation:

  1. Rinse off tenderloins in cold water and cut them in half; 1= 24 pieces
  2. Whip all above seasonings together in medium mixing bowl
  3. Add chicken strips to ingredients to marinade for three hours in refrigerator
  4. After three hours, take chicken out of refrigerator put them on six inch skewer
  5. Fire grill to medim-high, and cook chicken for 2 1/2 minutes

* Should serve 10-15 servings
