BUTTER CHICKEN

serves three to five people

Ingredients:

GROUP 1:

  • 2 lbs chicken
  • 1/4 lb of yogurt
  • 1 tsp red chili
  • 1/2 tsp Tandoori masala
  • 1 T lemon juice
  • 1/2 tsp of Garam masala
  • red food coloring

GROUP 2:

  • 2-3 sticks of butter
  • 1 tsp garlic paste
  • 1 tsp ginger paste
  • 1 tsp garam masala
  • 6 tomatoes diced
  • 1/4 lb tomato puree
  • 2 C heavy cream
  • 1 oz. dry fenugreek leaves
  • 1/2 tsp Tandoori masala
  • 10 cardamom
  • 2 T sugar
  • 5 leaves of cilantro
  • salt to taste

Directions:

1) Wash, take out fat and cut the chicken into small cubes and marinate overnight with ingredients from group 1

2) Add butter to pan and heat until it begins to boil

3) Add garlic paste, ginger paste and garam masala

4) Add freshly diced tomatoes

5) Add tomato puree

6) Add cardamom

7) Add heavy cream and sugar

8) Let all these ingredients boil. Keep stirring while boiling

9) Add the marinated chicken breast, tandoori masala and keep stirring

10) As the chicken comes to boil, add dry fenugreek leaves

11) Add salt to taste and transfer to a serving tray

12) sprinkle cilantro for aromatic smell and heavenly taste

CHANNA MASALA

serves three to five people

Ingredients:

3 T vegetable oil

2 lbs chick peas

1 T channa masala

1 onion chopped

1 T garlic paste

1 T ginger paste

1/2 tsp red chili powder

1 tsp garam masala

1 T cumin powder

1/4 tsp turmeric powder

5 cardamom

1 stick cinnamon

6 black pepper

6 cloves

3 bay leaves

6 tomatoes diced

2 T tomato puree

1 tsp amchoor

5 leaves cilantro

salt to taste

Directions:

1) Wash the chick peas in cold water

2) add vegetable oil to a non-stick pan

3) heat the oil until it begins to boil

4) add onion, garlic paste and ginger paste

5) add red chili powder

6) add turmeric powder, cumin powder and turmeric powder

7) add chana masala

8) add amchoor

9) add freshly diced tomatoes

10) add tomato puree

11) add garam masala, cardamom, cinnamon stick, whole black pepper, cloves and bay leaves

12) let all these ingredients boil. Keep stirring while frying.

13) add chick peas and boil for few minutes

14) sprinkle cilantro for aromatic smell and heavenly taste
