Ingredients

  • 4 cups corn kernels (fresh)
  • 1 cup diced tomatoes
  • 1 cup diced avocado
  • 1 cup diced watermelon
  • 1/2 oz. cilantro leaves
  • 1/2 oz. mint leaves
  • 4 tablespoons of extra virgin olive oil
  • 1 lime
  • salt and pepper

Herbed yogurt dressing

  • 1 cup Greek yogurt
  • 2 teaspoons garlic
  • 4 tablespoons orange juice
  • 1/2 oz fresh basil
  • salt and pepper

Directions

  1. In large bowl, mix all ingredients and lightly toss together
  2. In small increments, incorporate dressing
  3. Serve and enjoy
