
MEDITERRANEAN SHRIMP SALAD
1 ea Flat bread, baked until crispy and golden brown in wood burning oven
or on the grill

2 ea marinated Shrimp skewers
1 pinch each side salt and pepper mix
1 spray each side Pam or other vegetable oil spray
Grill, charring shrimp and vegetables approx. 5 - 7 minutes.

2 cups Chopped lettuce mix
2 cups Baby spinach
½ - 2 oz Roasted garlic cloves
2 oz Calamata olive halves
2 oz Artichokes, julienned
2 oz Blanched sugar snaps (cut in 1/3s)
1 pinch salt and pepper mix
3 oz Lemon herb vinaigrette
Toss together in stainless steel bowl

1 ea above Tossed salad (piled high)
1 ea baked Flat bread - arrange around plate
1 scoop Goat cheese
Crumble over salad
2 ea grilled Shrimp skewers
