Shrimp & Grits

 

1 cup water

1 cup milk

½ cup instant grits

4 oz. mascarpone

1 oz. cheddar

1 oz. Romano cheese

1 tsp salt

 

Boil the water and milk, and then add the instant grits. Whisk for about 5 minutes. Take the grits off the heat and whisk in the mascarpone, cheddar, Romano cheeses and salt. Remember, always season to taste. Put aside to make your choice of shrimp to be placed on top of the grits.

 

Chipotle Honey Glazed Shrimp

 

1 tbsp chipotle

1 tbsp honey

3-4 large shrimp

3-4 slices of bacon

 

Mix honey and chipotle together and set aside. Wrap shrimp in bacon. Sauté shrimp wrapped bacon in a shallow pan, and add honey chipotle mix. Cook no more than 5 minutes until the shrimp is a nice pink, along with nicely browned bacon. Place on top of cheesy grits.

Walnut-Basil Sweet Thai Chili Glazed Shrimp

 

1 tbsp sweet Thai chili sauce

1 tsp walnut

1 tsp basil

 

Mix the sweet Thai chili sauce, walnuts, and basil and set aside. Wrap shrimp in bacon. Sauté shrimp wrapped bacon in a shallow pan, and add the sweet Thai chili mix. Cook no more than 5 minutes until the shrimp is a nice pink, along with nicely browned bacon. Place on top of cheesy grits.
