Ingredients:
- 1 lb. potato
- 1 whole egg
- 3 oz. flour
- salt
- pepper
- 2 oz. parmesan cheese
- pinch nutmeg
To prepare the Potato Dumplings:
- In a separate pot boil the potatoes until cooked or bake in the oven at 350 for 45 minutes.
- Peel the potatoes and pass them through a food mill.
- Add the parmesan, egg, salt, pepper and nutmeg.
- Mix well and then form into gnocchi.
- Cook in salted boiling water.
- Serve with the ragu.
