Whipped Sweet Potatoes with Citrus

Sweet potatoes - 3 each
Orange - 1 each
Honey - 2 Tablespoons
Salt to taste
Black Pepper to taste
1. Preheat oven to 425 degrees. Place sweet potatoes on baking sheet or aluminum foil and cook turning every 20 minutes until soft or easily pierced with a fork.
2. Peel skin from sweet potatoes and discard skin. Cut the warm potatoes into large chunks and place in the bowl of a food processor.
3. Zest orange and chop zest finely. Juice orange into bowl of food processor, add zest, honey, and salt and pepper. Puree the sweet potatoes in the food processor until very smooth. Season with additional salt and ppeer if desired. Serve.
