Uncle Jim's Chicken Puttanesca
Preparation Time: 25 minutes, Serves 6
¼ cup vegetable oil or olive oil
6 boneless skinless chicken breasts (approx. 2lbs.)
1 cup of flour
2 cups diced onion
¼ cup sherry
1 (26oz.) jar Uncle Jim's Late Night Puttanesca
Heat oil in large skillet over medium heat. Slice chicken into strips, then add salt and pepper to taste and dredge in flour. Lightly brown chicken in skillet, remove chicken, place in a baking pan and set aside. In same skillet, add onion and sauté 2-3 minutes on medium heat. Add sherry and cook on medium heat for 2 minutes. Add Uncle Jim's Late Night Puttanesca and cook for 2-3 additional minutes. Pour sauce over chicken, cover and bake at 450 degrees for 15-18 minutes. Serve with your favorite pasta or rice.
Aunt Mary Ann's Bruschetta-In-A-Hurry
Preparation Time: 10 minutes, Serves 6
1 baguette or thin loaf of Italian or other fresh bread
14 oz (about half of one jar) La Famiglia DelGrosso Aunt Mary Ann's Sunday Marinara
6 oz crumbled mozzarella or provolone cheese
1 tablespoon chopped fresh basil
Slice loaf into even slices between ½ and 1 inch thick. Toast bread slices in a toaster (alternatively, toast one side of the bread by placing bread on a baking sheet a few inches from oven broiler for 2 minutes). Top each slice of bread with a tablespoon of sauce and a sprinkling of cheese and basil. Add salt and pepper to taste. Place on a serving tray and enjoy.
