CRAB SALAD CROSTINI WITH MAPLE MUSTARD

                                VINAIGRETTE

4 PORTIONS

INGREDIENTS

12 slices of baguette

1 table spoon olive oil

Salt and pepper

Method of Preparation

1 slice the baguette thinly, drizzle with olive oil, then season with salt and pepper. Bake in a pre heated oven 375f for 10minutes until crispy.

Crab Salad

½ cup mayonnaise

1 teaspoon old bay

2 tea spoons lemon juice

½ tea spoon Worcestershire sauce

½ tea spoon English mustard powder

8oz jumbo lump crab

11/2table spoons diced yellow peppers

11/2 table spoons sliced scallions

 Method of preparation

1 Mix all the ingredients together carefully and refrigerate.

Maple Mustard dressing

1 table spoon Dijon mustard

4 table spoons grain mustard

2 tea spoons sherry vinegar

¼ cup light olive oil

¼ cup maple syrup

Method of preparation  

1 Mix all the ingredients together with the exception of the oil.

2 Slowly add the oil whisking continuously.     

Set up

Spoon the crab salad onto the crostini, garnish with mixed greens, halves of local baby tomatoes and maple mustard vinaigrette
