Tasty kale salad recipe

Kale is one of the most popular ingredients for healthy dishes. To make kale even tastier, you can actually massage the kale so it better absorbs the dressing you put on it! This is a well kept secret that will make your kale salad taste more delicious. Massage your kale and then follow these steps for a perfect summer salad! Ingredients

2 cups firmly packed fresh cilantro (from about 1 bunch)

¼ cup canola oil

¼ cup plain yogurt

1 tablespoon distilled white vinegar

1 garlic clove

Salt and freshly ground black pepper

4 cups kale, stems removed and leaves shredded

⅓ cup drained, canned chickpeas

¼ cup crumbled tortilla chips

¼ cup crumbled queso fresco

¼ cup pomegranate seeds

Directions

Put the cilantro, canola oil, yogurt, vinegar, and garlic in a blender and process until smooth. Season to taste with salt and pepper.

In a large bowl, combine the shredded kale and the dressing. Using your hands, gently massage the kale and mix until the dressing is evenly incorporated, about 2 minutes. Transfer the dressed kale to a serving platter and garnish with the chickpeas, tortilla strips, queso fresco, and pomegranate seeds. Serve immediately.
