Super Bowl Wings with Salt & Pepper Chefs

Salt and Pepper Chefs Terrell Danley and Brian Reeve show Meaghan Mooney how to prepare a variety of Super Bowl wings.

 

 

 

 

Brian's Grilled Hot Chicken Wings

Serves 2 to 4

Prep time: 5 minutes; cooking time: 10 minutes

Ingredients

  • 8-to-10 chicken wings
  • Salt & Pepper
  • ¼ cup vegetable oil
  • 1 cup favorite hot sauce (plus more for dipping)

Directions

  1. Preheat grill to high.
  2. Set out meat for ½ hour to bring to room temperature.
  3. Season chicken wings w/Salt & Pepper.
  4. Coat w/olive oil.
  5. Coat w/hot sauce.
  6. Put wings on grill, skin side down.
  7. Grill until golden brown on both sides (about 5 minutes per side).
  8. Wings will be done when they easily come a part and juices run clear.
  9. Remove from grill; serve w/extra hot sauce.

 

Chef Tee's Flaming Hot Wings

Serves 2 to 4

Prep time: 5-to-10 minutes; cooking time: 20 minutes

Ingredients

  • 2 lbs. party chicken wings (aka wings and dings)
  • 2 Tbsps. vegetable oil
  • 2 Tbsps. seasoned salt
  • 1 stick (8 Tbsps.) unsalted butter
  • 2 cups favorite hot sauce

Directions

  1. Preheat oven to 500° F.
  2. Remove chicken from package; rinse wings and dings in sink w/cold water.
  3. Pat chicken dry w/paper towel.
  4. In large bowl, combine wings, dings, oil, salt.
  5. Spread out chicken pieces on large cookie sheet (make sure wings and dings don't touch).
  6. Bake chicken uncovered for 10 minutes or until golden brown.
  7. Remove chicken from oven; use tongs to turn meat over; continue cooking for 10 more minutes to brown other side.
  8. Remove chicken from oven; drain off excess fat; put wings and dings in large bowl; set aside.
  9. In small sauce pan, add butter and hot sauce; cook over high heat until butter melts, mixture combines and boils.
  10. Stir butter mixture w/spoon or whisk; pour over wings; toss; serve.

 

Chef Tee's Fried Chicken Wings w/Spicy Honey Sauce

Serves 2 to 4

Prep time: 5-to-10 minutes; cooking time: 5-to-10 minutes

Ingredients

  • 8-to-10 chicken wings
  • Morton Season-All® Seasoned Salt
  • Flour
  • Oil for deep frying
  • Spicy honey sauce (see recipe below)

Directions

  1. Heat oil to 300° F to 325° F in a deep fryer or large heavy pot.
  2. Season wings w/seasoned salt.
  3. Coat wings w/flour; fry in hot oil in batches.
  4. Wings will be done when they float in the oil.
  5. Drain on paper towel; serve w/spicy honey sauce.

 

Spicy Honey Sauce

Ingredients

  • 2 Tbsps. chili paste
  • 1 / 4 cup honey
  • 1 tsp. cilantro, chopped

Directions

  1. Mix ingredients.
  2. Serve w/fried chicken wings.
