Simple, easy 3 bean jasmine and lemon pepper salmon salad

Check out this recipe for a quick, easy meal - only 10 minutes prep!

Makes 1 serving

Prep time: 10 minutes

Ingredients:

1 cup Minute® Ready to Serve Jasmine Rice

1 (2.5 ounce) pouch Chicken of the Sea® Lemon Pepper Pink Salmon

1/3 cup frozen green beans, thawed

¼ cup canned kidney beans, rinsed

¼ cup canned garbanzo beans, rinsed

4 cherry tomatoes, cut in half

¼ cup red onion, thinly sliced

2 red cabbage leaves

 

Directions:

1.      Heat rice according to package directions. Let cool to room temperature.

2.      Toss together all ingredients and place on top of cabbage leaves.

 

To pack ahead and serve cold: assemble ingredients in an airtight container and refrigerate until ready to eat.
