2 lbs grouper
1 bay leaf
2 yellow onions, diced
2 celery stalks, diced
1 garlic clove, chopped
1 tbsp whole cloves
1 habenero pepper (or any spicy pepper of your choice) finely chopped
1/2 lb potatoes, peeled and cut into cubes
salt & pepper to taste
Season the grouper with juice of 2 limes, salt, and pepper. Fill a large pot with 2 cups of water. Add the bay leaf, onion, celery, garlic, cloves, hot peppers, and potatoes to the pot. Bring to a boil, cover, and cook for 15 minutes, or until potatoes are almost done. Add more water to the pot if necessary, then add the grouper with the lime juice. Reduce the heat to a simmer and cook for 10 more minutes, or until the fish is done. Discard the bay leaf. Add salt and pepper to taste. Serve with a side of brown rice if desired.
