WASHINGTON, DC (WUSA9) - Wondering what to do this weekend? The Giant National Capital Barbecue Battle is this Saturday and Sunday! Head over to Pennsylvania Avenue where BBQ teams and restaurants across the country will compete for over $40,000 in cash and prizes. Here are some tips to turn you into a grilling champion.
Cut eggplant lengthwise. This allows you to flip fewer pieces over a hot grill. Cut the eggplant into 1/4 inch pieces, brush each side with olive oil, then place on the grill. Cook for 8-10 minutes (flipping once halfway).
Precook potatoes in the microwave. This cuts down on grilling time. Steam bags of fingerling or red potatoes in the microwave for 5 minutes. After the potatoes have cooled, place in aluminum foil pouches. Season to your liking, seal the pouches, and throw on the grill for 8-10 minutes, or until fork-tender.
Enhance with added flavors. Don't expect the grill to do all the work for you. Balsamic glaze brings out the smoky, charred flavor of grilled vegetables.
Don't be afraid to put fruit on the grill. This is a great alternative to sugary desserts at a barbecue. The grill brings out the natural sweetness of the fruit.
