Easy, healthy salmon kabob recipe

According to the American Diabetes Association, 86 million Americans are at risk for diabetes. But that risk can be diminished significantly with a proper amount of exercise and a healthy diet. This recipe for salmon kabobs and farro grains makes for a great, kid-friendly meal so you can help prevent the disease early on.

Salmon Kabobs with Farro

Salmon Kabobs

Salmon

slices of zucchini

Olive Oil for grilling

Skewer the zucchini and salmon in an alternating pattern.  Brush with olive oil and grill for 3 minutes per side or until cooked through.

Pesto Farro

Farro, cooked

Roasted Tomatoes, chopped

Basil Pesto

Lemon Juice

Extra Virgin Olive OIl

Bring 4 cups of lightly salted water to a boil; add farro. Cook for approximately 16 minutes or until al dente; drain, then cool. Combine all ingredients for Pesto Farro in a mixing bowl and mix gently until fully incorporated.
