Delicious and local DC halfsmoke recipe

Local chef Andrew McCain knows the value of a good ol' local DC Halfsmoke and now he shares this recipe with us! Let us know how you like it when you make it!
 
Ingredients:
Half Smokes………… 2 each
Pulled Pork…………… 1 Cup
Mustard Slaw……… 1 Cup
Onions………… 1/4 Cup
Cheese………… 1/4 Cup
Roll…………… 2 each
Butter………… 2
Tablespoons Olive Oil………… 2 Tablespoons
 
Directions:
1. Pick you favorite HalfSmoke.
2. Pick a bun that can stand up to a lot of toppings + the sausage.
3. Dice the onions into fine cubes.
4. Sear the HalfSmoke in a pan with a little olive oil. Add 1/2 c of your favorite beer and cover until fully cooked through.
5. Sear the roll with a little butter to gain flavor.
6. Add your cooked halfsmoke to the roll, top with diced onion, pulled pork, mustard slaw, bacon and cheese. (We use cheese melted and mixed with beer!)
7. Enjoy!!
 
Mustard Slaw Recipe:
Dijon Mustard 1 tablespoon
Yellow Mustard 1 tablespoon
Sugar 1 teaspoon
Cider Vinegar 1 teaspoon
EVOO 1 teaspoon
Celery Seed pinch
Green Cabbage 1/2 head
Salt To Taste
Pepper To Taste
Carrots 1/2 each
 
1. Slice the cabbage and carrots very fine.
2. Mix together in a bowl the mustards, sugar, vinegar, evoo and celery seed.
3. Add the sliced cabbage and carrots to the bowl and mix thoroughly.
4. Season with salt and pepper to taste.
 
Tip#1: Cut you bacon into strips (or lardon). Slowly heat the bacon until the fat starts to render away, then turn up the heat to crisp. This will give you a great flavor a great ending product!
 
Tip#2: You can use any cheese for this recipe you like. We melt and mix a couple of our favorites with a little beer to create a great flavor and consistency
