Frittata Muffins


1 16oz carton of egg whites/egg substitute

1 small white onion, diced

1 bell pepper, seeded and diced

1 Roma tomato, diced

1 cup packed spinach, chopped

1 Tbsp fresh cilantro, chopped

1/2 tsp salt

1/4 tsp black pepper


Preheat oven to 350 degrees Fahrenheit.

Pour the carton of egg whites or substitute into a large mixing bowl. Add all other ingredients to the bowl. Stir well to make sure everything is evenly distributed.

Spray a regular-size muffin tin with nonstick cooking spray. Use a ladle or ice scream scoop to fill each of the 12 muffin cylinders about halfway. Bake for 25 minutes. Serve with a side of low-glycemic fruit, such as apples or oranges.
