Mango Shortcake
serves 4
4 slices of pound cake
Whipped cream
2 C. mango chunks
1 tsp. lime juice
1/2 tsp vanilla extract
4 Tbs. sugar or to taste
Mix together all ingredients and let stand for at least 10 minutes to overnight in fridge. Scoop on to sliced pound cake and top with whipped cream.
Mango Black Bean Salsa
2 C. mango chunks
1 can (15 oz) cooked black beans, drained and rinsed
1/2 C diced onion
1 jalapeno minced (optional)
1/2 C. chopped Cilantro
2 Tbs. lime juice
Salt to taste
Mix all ingredients together and season to taste with salt. Can be stored up to 5 days in the refrigerator.
MANGO-rita
1 C. ice cubes
2 oz tequila
1 oz lime juice
1 C. mango pieces
2 oz simple syrup
Puree all ingredients in a blender until smooth. Serve in a salt rimmed glass.
