(WUSA9) --- It was an appetizing day here for the WUSA9 noon newscast. In today's world, it seems almost impossible to create a meal that is cheap, nutritious and easy to make.
Today, we welcomed Debbie Amster from Nourishing Possibilities and she shared with us her Sweet Potato Greens recipe. Sweet Potato Greens are not as common here in the states, but they are quite popular in Asia.
Why are greens so good for you? Well, greens are high in Vitamin A and K, vital nutrients for your body.
This meal took no time to make and it left a light, but delicious taste in our mouths. 1 medium bunch of fresh sweet potato leaves
2 medium tomatoes, diced
1 medium onion, diced
1 thumb-sized ginger, minced
Juice of 1 lime
1 tbsp olive oil
3 tbsp soy sauce
1 Tbs. toasted sesame seeds
In a small bowl, combine ginger, lemon juice, olive oil and soy sauce.
Heat water in a pot, bring to a boil, add sweet potato leaves and blanch for 30 seconds. Drain. Transfer to a serving dish.
Pour the lemon juice mixture over the blanched sweet potato leaves, add tomato and onions, and mix well. Serve.
Serve over hot rice, sprinkle with sesame seeds.
